Are Atome Bakery’s Sourdough Bread and Pastries Vegan? 🌱
Yes, all of our sourdough breads are vegan! We use three main ingredients: organic Canadian flour, water, and salt, with natural fermentation. No dairy, no eggs, nothing extra.
And for those who love pastries, we’ve recently added more vegan-friendly options too, like our vegan chocolate walnut cookie and our vegan croissant, which tastes buttery but is 100% plant-based. All of our other pastries (waffles, brioche, viennoise etc.) are made with excellent New Zealand premium butter.
Does Sourdough Have Gluten? Is It Easier to Digest? 🥖
Yes, sourdough bread is made with wheat flour, so it does contain gluten. But here’s the difference: our slow fermentation helps break down some of the gluten and phytic acid, making sourdough easier to digest for many people compared to regular bread.

What Kind of Flour Does Atome Bakery Use? 🌾
We keep it clean and simple. At Atome Bakery, we use organic Canadian flour that is non-GMO. We do not use industrial yeast or unnecessary additives. Just flour, water, salt, and time.
This means you’re getting bread that’s as close to traditional French sourdough as it gets, without the hidden extras. That said, Canadian law requires that all flour, even organic, be enriched with vitamins and minerals. So yes, our flour is organic, but it also follows Canadian regulations to make sure nutrition is standardized!
Do Your Products Contain Nuts or Other Allergens? 🥜
Most of our breads are seed-free, but a few do contain grains and seeds. For example, our sesame sourdough baguette and our poppy seed baguette each include their respective toppings. Our multigrain sourdough baguette is made with a blend of wholesome grains and seeds: cracked rye meal, cracked wheat, flaxseed, pearl barley, millet, Scottish oatmeal, and sunflower seeds.
The rest of our breads do not contain seeds, and we take great care to avoid cross-contamination during production!
As for our pastries, the only product that contains nuts is our vegan chocolate walnut cookie. Everything else, from croissants to apple turnovers to waffles, is nut-free. Once again, we are very mindful in our facility to reduce any risk of cross-contamination.
