Combined with slow cold fermentation over 24 hours or more, the process breaks down gluten, develops deep flavour, and produces a bread that's genuinely easier to digest than commercially yeasted loaves. If it doesn't use a live starter and long fermentation, it isn't sourdough — it's just bread with sour flavouring.

Is your sourdough actually fermented for 24+ hours?
Yes. Every sourdough loaf goes through a minimum 24-hour cold fermentation after shaping. We don't rush it — the flavour and digestibility depend on the time.
Does sourdough bread freeze well?
Extremely well. Slice before freezing, then toast from frozen or bake the whole loaf at 375°F for 15 minutes. It comes out tasting freshly baked.
What's the difference between sourdough and regular bread?
