How We Make Our Pastries

Real croissants take three days. We laminate our dough with high-fat butter using a classic détrempe process: fold, chill, fold, chill — repeated until the dough has 27 distinct layers. The shaped pastries then cold-proof overnight before baking fresh each morning. There are no shortcuts in how we make them, and you'll taste the difference immediately.

What makes your croissants different from store-bought?
Store-bought croissants use margarine, shortcuts, and industrial shaping. Ours are laminated by hand with real butter over three days. The layers, the shatter, and the flavour are in a completely different category.
